Some Hard Facts!

Why the loss of a few pieces of flatware matter

· Over 1 Billion dollars worth of flatware, ramekins, and metal utensils are thrown away every year by  the restaurant, hospitality, and institutional industries, in the U.S. alone.

· A billion dollars worth of flatware, ramekins, and metal utensils represent approximately 50,000 to 100,000 tons of metals

· The energy required for the mining, smelting, casting/stamping & transportation processes to replace 50 to 100 thousand tons of  metals on an annualized basis is immense!

· The “American Iron and Steel Institute” in a report titled  “Saving One Barrel of Oil per Ton (SOBOT) A New Roadmap for Transformation of Steelmaking Process” issued in October 2005, states that it requires approximately 12.6 million BTU per ton shipped, or 2.07 barrels of oil per ton shipped (of iron & steel).

· Doing the math this means that up to 207,000 barrels of oil are required to create the raw product to replace the lost flatware, ramekins, and metal utensils.

· This just the raw product then you have the energy required to actually produce and transport the finished flatware, ramekins, and metal utensils.

· The final number could be as high as 250,000 barrels of oil wasted annually! This is roughly twice the annual oil consumption of a small country (example the British Virgin islands).

· The NRA “National Restaurant Association” has a new initiative labeled “CONSERVE” to work toward energy conservation within the Restaurant / foodservice industry. One of the top suggestions is the 3r’s for sustainability, reduce, reuse , recycle. This certainly applies to flatware, ramekins, and metal utensils.

· Then there's all that trash. Restaurants produce far more garbage on a daily basis than most other retail businesses. A typical restaurant generates 100,000 pounds of garbage per location per year, the Green Restaurant Association estimates.

· The metals that you send to the Land fill will never break down. They will still be there hundreds of years from now.
